卤牛肉
身在美帝,吃货想吃卤牛肉只得自己做了。
首先是选牛肉,不能选太瘦的,别去超市找贵的买,一般肥肉多的比较便宜。我用的是牛腱,也就是 beef shank,如果在大农村超市找不到类似的,买一块 beef chuck 也行,肩膀肉比较肥。

香蕉巧克力Muffin
还是君之的方子,链接在这里。
配料:低筋面粉100克,泡打粉1小勺,小苏打1/4小勺,可可粉15克,鸡蛋30克,红糖80克,植物油50ML,牛奶65ML,熟透的中型香蕉1根(带皮约180克)
烘焙:烤箱中层,上下火170度,25-30分钟
制作过程:
1、香蕉去皮,放进保鲜袋里,压成泥。
2、低筋面粉、泡打粉、小苏打、可可粉混合过筛。
3、鸡蛋打散,加入植物油、牛奶、红糖。
4、轻轻搅拌均匀,再倒入第一步压好的香蕉泥,搅拌均匀。
5、把过筛后的面粉倒入第4步的液体混合物里。
6、用橡皮刮刀拌匀,制作这一步的时候一定要注意,不要搅拌过长时间,只要搅拌到粉类材料全部湿润即可。此时的面糊看上去虽然还有很多粗糙的疙瘩,但也不要继续再搅拌了。
7、装入纸杯,6、7成满即可。并立即放入预热好烤箱烤焙。
8、烤箱中层,上下火170度,25-30分钟即可出炉,趁热吃或者等凉了再吃,都同样松软可口。
我还加了些巧克力碎片,结果有点太甜了,里面有点小苏打的味道,下次减少一些。

椰香朗姆葡萄蛋糕
这次的Muffin用的是君之的方子,地址在这里。第一次用低筋面粉做麦芬,出来的效果我很喜欢,很软很软。
方子粘贴在这里:
配料:低筋面粉100克,黄油100克,鸡蛋50克,红糖60克,葡萄干40克,朗姆酒40克,动物性淡奶油50克,椰蓉40克,香草精1/2小勺(2.5ML),泡打粉1/2小勺(2.5ML),盐1/4小勺(1.25ML)烘焙:烤箱中层,上下火180度,12-15分钟。
制作过程:
1、葡萄干用朗姆酒浸泡半个小时以上。
2、黄油软化以后,加入红糖和盐,用打蛋器打发至膨松状态。
3、分两次加入鸡蛋,并搅打均匀,需要等第一次加入的鸡蛋与黄油彻底融合以后,再加第二次。
4、倒入香草精,并搅拌均匀。
5、倒入动物性淡奶油,此时不必搅拌。
6、面粉和泡打粉混合后筛入黄油混合物里。
7、加入椰蓉以及用朗姆酒浸泡后滤干的葡萄干。
8、用橡皮刮刀翻拌均匀,成为湿润的面糊。
9、把面糊装入模具,2/3满。
10、放入预热好180度的烤箱,烤12-15分钟,直到完全膨胀,表面呈深金黄色即可。

香蕉面包

Ingredients
1/2 cup margarine, softened(家里没unsalted butter了,用了salted butter出来效果还是挺好的)
1 cup white sugar
2 eggs
1 1/2 cups mashed banana(就用了四根熟透了的香蕉。)
2 cups all-purpose flour
1 teaspoon baking soda
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch pan.(我用的蜡纸,这样盘子都不用洗了)
Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for about 1 hour (or till toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.

Banana Muffins

这个recipe里面放的糖超级多,上面写3/4杯白糖,我自己做放了1/2杯,就已经很甜了。不喜欢吃甜点的同学们切记少放啊~
还有香蕉,商店里买来几天以后,已经变得软趴趴了,这种香蕉口感不好,所以用来做Muffin、蛋糕、面包什么的最合适了。
这么多材料做了九个muffin,口感相当好~~
INGREDIENTS (Nutrition)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large bananas, mashed
3/4 cup white sugar
1 egg
1/3 cup butter, melted
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
2. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.
